Amazing Dinner Rolls


You are looking at the only thing I wanted to eat for dinner last night.  I love homemade rolls anyway but these were so incredibly light and delicious I had to hurry up and bag them and put them out of my reach.

And the recipe makes 24 of these babies!!

I froze most of them and then for lunch I took two out and microwaved them for 30 seconds and they were just like they were last night.  If I don't get some help eating the rest of them I'm going to be in serious trouble.

They aren't like the crescent rolls you buy in that little tube from the grocery store.  These are better. Those are flaky and I wouldn't describe these as flaky, however they are tender and light and that little bit of salted butter on the top just makes my mouth water.


The shape that these are rolled into just make them that much lighter.  Just the perfect dinner roll.  I love them!

Amazing Dinner Rolls
Recipe from Cooking Classy



Ingredients
  • 1/3 cup warm water (110 to 115 degrees)
  • 2 1/4 tsp active dry yeast
  • 1/3 cup + 1/4 tsp granulated sugar
  • 1 1/3 cups warmed whole milk (110 to 115 degrees)
  • 3/4 cup (divided) salted butter
  • 1 large egg at room temperature
  • 1 1/2 tsp salt
  • 4 1/2 cups all-purpose flour
Cooking Directions
  1. Heat the water to the correct temperature and then add the yeast and sugar. Let sit for 5 to 10 minutes until foamy.
  2. In the bowl of your stand mixer, add the yeast mixture, milk, 5 Tbsp butter, egg and the salt. Mix with the whisk attachment until combined.
  3. Add 2 cups of flour and mix.
  4. Change the attachment to the dough hook and add the remaining 2 1/2 cups of flour.
  5. Dump the dough into a large greased bowl and cover with plastic wrap in a warm draft free location for about 1 1/2 hours. Until doubled in size.
  6. Pinch the dough down and then divide into two even pieces.  Roll the first piece out on a floured surface until about 13 inches in diameter. Smear about 2 Tbsp of softened butter onto the surface. Cut it into quarters, then each quarter into 3 pieces so you have 12 triangles. Roll each triangle (fat side toward skinny side) and then lay on a lined cookie sheet, seam side down. 
  7. Do the same with the other piece of dough so you have 24 rolled "crescent" dough pieces.  They should fit 3 rows of 8 each. 
  8. Cover loosely with plastic wrap for another hour and let rise. 
  9. Preheat the oven to 375º the last 10 minutes of rising. Bake for 15-17 minutes or until golden.  Smear with the remaining softened butter when they first come out of the oven. Serve hot. 
  10. These freeze very nicely or you can refrigerate in an air tight bag for about a week.

Honey Wheat Dinner Rolls


It's HUMP DAY! That commercial drives me crazy yet it is oddly addictive at the same time. I'm weird like that.

I know most of you can agree that when it comes to dinner, the easier the better.  All I want to do at the end of the day is sit down and relax for a minute.  But dinner must be made first!  I had a huge craving for dinner rolls the other night.  Honey wheat rolls to be exact.  The problem was that I had already started dinner (chili) so I didn't have hours and hours to wait for bread to rise.

I couldn't believe it when I saw this recipe and realized that it only took less than an hour to make.  I HAD to try them. The result? One of the quickest, tastiest dinner rolls I've ever made.  I'm IN LOVE with this recipe!  I can't say enough nice things about it.  I've also had leftover rolls in a zip top bag in my refrigerator for several days and each time I want one I just grab it and put it in the microwave for about 20 seconds and it's still delicious.  Why can't all yeast bread recipes be this easy?

Do yourself a favor and whip some homemade dinner rolls up tonight.  You will be so happy you did!




Honey Wheat Dinner Rolls
Recipe from Jamie Cooks it Up


Ingredients
  • 2 cups wheat flour
  • 2 cups all-purpose flour
  • 3/4 cup hot milk
  • 3/4 cup hot water
  • 1/4 cup honey
  • 1 tsp salt
  • 6 Tbsp butter, softened
  • 1 Tbsp yeast (I used active dry)
Cooking Directions
  1. Preheat the oven to 170º
  2. In the bowl of your stand mixer (using the dough hook) add 2 cups of wheat flour and 1 cup of white flour, 1/4 cup of honey and the heated milk (heat 3/4 cup of milk in the microwave for 1-2 minutes). Add the heated water (water should be hot but not burn your hand).  
  3. Add the salt and softened butter. Turn the mixer on low and blend for about 1 minute. 
  4. Add the yeast and mix for about 30 seconds. 
  5. While the mixer is on, add 1 more cup of white flour. 
  6. Let the mixer mix for about 1 minute, the dough should begin to pull away from the sides of the bowl.  If the dough remains sticky, you can add more flour (up to 1/2 cup).  Once the dough is the right consistency you can turn the mixer up to medium and mix for 5 minutes. 
  7. Coat the bottom and sides of a 9x13 inch dish with some softened butter or cooking spray. 
  8. Dump the dough into the middle of the pan.  
  9. Use a sharp knife to cut the dough into 16 equal pieces. 
  10. Roll each piece into a ball and place in the pan. 
  11. Place the pan in the warm oven and let rise for about 15 minutes or until doubled in size. 
  12. Leave the pan in the oven and raise the temperature to 350º
  13. Bake until the rolls are golden brown on top, mine took about 25 minutes but Jamie's (from the link above) only took 13 minutes so check them often.  
  14. Remove from the oven and brush some butter over the tops.  Salted butter works best I think. 
  15. Allow to rest for 5 minutes in the pan and then enjoy!

Dinner Rolls


This is the second time making these yummy rolls.  I just love working with yeast now that I'm not scared of it.  It does require some time however, these need three different rise cycles.  Boy are they yummy, and your kitchen smells so good...


Begin by warming some milk and then dumping the yeast on top and letting it rest for 5 minutes.



Add the butter, eggs, sugar and salt and add to the yeast mixture.  Mix thoroughly.



Gradually add the flour and mix until combined.  Do not over mix.



Plop this mixture into a buttered bowl and turn to coat.



Put a clean towel on top and put in a warm area for an hour.  I usually put a space heater in a small room like my laundry room to get the heat needed to make these rise in the winter time.



This is what it'll look like after about an hour.  Punch it down, turn it over and let it rise again - another hour.  When that hour is up, do it one more time and wait another hour.

OK, now that it's been three hours, pull pieces of the dough off and plop them into a greased 9x13 inch pan.  You want these to be in a ball shape, but you also don't want to work it too much.  They'll get heavier and more dense the more they are handled.



Put into the oven and let bake for 10 - 15 minutes or until they are a golden brown all over.  As soon as they come out of the oven, slather them with softened salted butter.



Now, sit down and enjoy these babies.  They took up your entire afternoon but they are soooooo worth it.
