Homemade Bailey's Irish Cream



Is there anyone on your Christmas list that just isn't easy to shop for? Well, this homemade drink might be just the thing.  Turns out that Irish Cream is really easy to make.  it took me 5 minutes to pour all the ingredients into a blender and mix it up.  Just buy a fancy glass bottle and wrap it up beautifully and you're done!



I don't usually slug down Irish Cream by itself so I'm not sure how great this information is, but they look very close to each other.  They smell very much like one another.  I think this version is thicker if you use heavy cream (which I did) and it might be a little stronger than the original (feel free to use a little less whiskey).  I drank some tonight in my coffee and it was really good, its also good over ice, just sayin.

Homemade Bailey's Irish Cream

Ingredients
  • 1 cup light or heavy cream
  • 14 oz sweetened condensed milk
  • 1 2/3 cup Irish Whiskey (or less, this amount makes a strong drink)
  • 1 tsp instant coffee granules
  • 2 Tbsp chocolate syrup
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
Cooking Directions
  1. Pour all the ingredients into a blender and mix until well combined. That's it.
  2. Store in your refrigerator for up to two months.
  3. **You can also skip the booze and add some skim milk instead, if you're looking for a non-alcoholic version.

Guavaberry Colada



I was lucky enough to get to travel to St. Maarten at the end of March of this year, with my daughter. We fell in love with the island, the people, the food and especially the drinks.  Tropical drinks are my favorite anyway, I love fruit flavored drinks that you can't really taste the alcohol in.  I had several great drinks but I was only able to get the recipe for a couple of them.  This one was by far my favorite.

Now I'm kicking myself for only bringing back one bottle of this rum.  Is is SO good.  I was able to find some American locations that carry this rum but sadly none of them are near me.  I guess another trip to St. Maarten is necessary.  I wonder how many bottles I can bring back without getting arrested.

This drink is a little hard to describe unless you've had Guavaberry Rum.  It's sweet but not overly sweet, fruity but not necessarily a guava flavor as you might expect. It's sort of creamy due to the coconut cream. You don't necessarily taste the pineapple juice either, all the flavors just blend together so well that it's sort of a nondescript fruit flavor.  Sorry, that's the best I can describe it.

If you ever see a bottle of this rum, do yourself a favor and grab a bottle or six.

  • 3 oz. pineapple juice

Sweet Rice Drink



If you're lucky enough to live near a Public grocery store then you'll understand me when I say, their Apron's meals are amazing.  They make some for you to sample, then have all of the ingredients that you need right there next to the display so you don't have to run around the grocery store searching for it all, and they give you the free recipe card to keep.  I love it.  

This recipe was paired with a yummy Baja Shrimp Taco recipe that was delicious and I do plan to make it eventually, however, this drink had my attention quickly. It's so dreamy.  The cinnamon really sets it apart. It reminds me of a drink for the holidays probably because of the cinnamon but I had to run home and whip it up.  

It's easy to make and comes together quickly (30 minutes) and all you need is a blender and a fine mesh strainer. I loved it.
Sweet Rice Drink

Ingredients
  • 1 cup uncooked white rice
  • 5 cups water
  • 1 (14 ounce) can sweetened condensed milk
  • 1 tsp ground cinnamon
  • 2 tsp vanilla extract
Cooking Directions
  1. In a blender, combine the rice and water and blend for 1 minute.
  2. Chill for 30 minutes or up to 3 hours.
  3. Add the remaining ingredients and mix together with a spoon until combined.
  4. Refrigerate leftovers.

Pink Lady


A little while ago my friend came over to my house and made me this fantastic drink, which was created by another friend of hers, at NewEnglandLiving.org. This is such a pretty drink, a very soft pink color, yet packs a punch.  So smooth going down, then you try to stand up and look out!

This drink is easy to make, just throw it all together and shake it up with some ice so it's nice and cold.  Perfect for Valentines Day or a girls night out!

  • 1/2 oz. simple syrup
  • 1/2 oz. grenadine
  • splash of fresh lime juice

Peppermint Marshmallows


Yes, I am waiting until the very last minute to post my Christmas recipes.  Isn't that nice of me?

My friend Melissa and I had a baking day yesterday, as we do every year. We each made three things and then we share what we made, so we each have six items to show for it. I'll share mine all week.

These marshmallows might seem intimidating but they really aren't all that difficult to make.  It's easier if you have a stand mixer but a hand mixer will work also.  You also really need to have a candy thermometer or and instant read thermometer available.

Making marshmallows is basically just cooking a sugar syrup on the stove and then whipping the heck out of it until it becomes white, light and fluffy. Fairly easy but if you have small children you'll really want to be careful with this hot sugar syrup on the stove.  Use the back burner and see if they can be elsewhere when it's time to pour it into the mixer.

These marshmallows are fantastic in hot cocoa.  Gift idea: Make a homemade hot cocoa mixture, place in a bag and put inside of a cute Christmas cup, add a bag of these homemade marshmallows and you have a fantastic homemade gift for someone special.  Enjoy!!

Peppermint Marshmallows

Ingredients
  • 3 packets unflavored gelatin
  • 1 cup cool water, divided
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/8 tsp salt
  • 1/8 tsp peppermint extract (optional) for a more pepperminty flavor
  • 1/2 cup peppermint candies, crunched up
  • 5-10 drops red food coloring (optional)
  • confectioners' sugar
Cooking Directions
  1. In the bowl of your stand mixer (or a mixing bowl) add the gelatin and 1/2 cup of the water. Let sit.
  2. Spray a 9x13 inch with a non-stick spray and set aside.
  3. In a heavy bottomed saucepan mix the granulated sugar, corn syrup and salt. Turn the heat on to medium and stir until the sugar dissolves. Then turn the heat up to high and bring the syrup to 238 degrees.
  4. With your stand mixer on low, with the whisk attachment (or hand mixer) slowly pour the hot syrup into the bowl with the gelatin. Once it's all been added, slowly turn the speed up to high and watch for the mixture to turn white and thicken. This will take 3-10 minutes depending on your mixer.
  5. You want the mixture to be thick but not so thick that it balls inside of your whisk. It would have cooled down to about 95 degrees.
  6. Add the peppermint extract and then the crushed up peppermint candies. If you're adding food coloring, add it just at the end and don't fully mix it in. You just want the color to sort of stream through the whiteness, leaving streams of red and streams of white.
  7. Spread the marshmallow mixture into the prepared pan and sprinkle confectioners' sugar all over the top. I find it easiest to use a fine mesh strainer to get a nice fine sprinkling over the top.
  8. Let the mixture dry for a minimum of 4 hours but overnight is best.
  9. If possible, it's easiest to lift the entire out of the pan and place on waxed paper and then cut them that way. If not possible just cut them while they are still in the pan and then dredge them into more confectioners' sugar so all sides are covered.
  10. Store them in an airtight container for several days.

Starbucks Lime Refresher (CopyCat)


Summer isn't over yet, although I wish I'd found this drink at the beginning of summer.  There is still time to enjoy it!

Easy to assemble and tastes for refreshing on a hot day.  It's fresh, not too sweet and there's the little hint of cucumber flavor that makes people go "oh, yum".  Perfect for a day by the pool or after a long day of yard work.  Kids love it and grown ups do too.

Ingredients
  • 1/4 cup mint leaves, finely chopped or mint tea in a bag
  • 3/4 - 1 cup cucumber, peeled and chopped
  • 3 cups water
  • 3/4 cup sweetener (I used sugar but you can use anything)
  • 2 cups fresh lime juice
  • lime slices for garnish if desired. 
Cooking Directions
  1. Add the chopped cucumber and finely chopped mint (or tea) to the 3 cups of water. Stir around and then use a fine mesh strainer to remove the mint leaves and cucumber pieces. Add the cucumber flavored water to a large pitcher.
  2. Add the lime juice and sweetener to the pitcher and stir in an additional 4 cups of water. Stir well until your sweetener has been incorporated.
  3. Chill and serve with a lime wedge for garnish, if desired.

Blueberry Lemonade


This will be one of my summer drinks this year.  Seriously, it's so refreshing. The blueberry flavor and the lemon flavor meld so nicely without one flavor overpowering the other. Perfect on a hot day by the pool or after a long day doing yard work.

It cools you right down.

It makes you want more.

I'm gonna go get some.

Ingredients
  • 1/2 cup fine granulated sugar
  • 1 cup blueberries
  • 3/4 cup fresh squeezed lemon juice
Cooking Directions
  1. in a medium saucepan, add the sugar and 1 cup of water. Bring to a boil and let the sugar dissolve. Add the blueberries and bring back up to a boil, then lower to simmer for about 3-4 minutes.
  2. Strain the mixture with cheesecloth or a fine mesh strainer and let cool.
  3. Add 5 cups of water to a pitcher and add the lemon juice. Stir in the blueberry mixture and chill.
  4. Serve over ice with additional blueberries if desired.

PW's Homemade Frappuccino




I don't even like coffee.  But I like coffee ice cream and this recipe is more like that flavor.  Creamy, chocolately, cold and delicious. 

Mind you, there is nothing skinny about this drink.  Think of it more as a drinkable dessert. I even made a tiny version for my daughter and she loved it.  I used decaffeinated coffee and didn't make it as strong as The Pioneer Woman suggested, mostly because I'm not a normal coffee drinker. 

You might be wondering why I even bothered trying this if I'm not a coffee drinker. 

Well, I like coffee ice cream.  I like the smell of coffee.  With enough cream and sugar poured in I'll even drink coffee on occasion. So, that's why I tried it.  I was having a hankering. I'm very glad I did try it because now I have a coffee drink that I actually like.  I might even try to order one at an actual coffee shop.  Baby steps.

PW's Homemade Frappuccino

Ingredients
  • 12 ounces very strong coffee or espresso
  • 8 ounces whole milk (or any milk)
  • 1/3 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/4 cup chocolate syrup
  • 1/2 cup semi-sweet chocolate chips (optional)
  • whipped cream
  • 1/4 cup half-and-half (optional)
Cooking Directions
  1. Make the very strong coffee or espresso and refrigerate until cold.
  2. Mocha Frappuccino: Pour the coffee into a blender and add the milk, condensed milk, and vanilla extract.  Top off with ice and blend until smooth.  Add some additional half n half if you'd like to make it creamier. Top with whipped cream and some chocolate sauce. 
  3. Vanilla Frappuccino: Pour the coffee into a blender and add the milk, condensed milk, vanilla extract and chocolate syrup to the blender.  Top with ice and blend until smooth.  Add some additional half n half if you want it a little creamier. 
  4. Mocha Chip Frappuccino: Pour the coffee into a blender and add the milk, condensed milk, vanilla extract and chocolate syrup and chocolate chips to the blender. Top with ice and blend until smooth.  Add additional half n half to make it creamier.

Natural Detox Drink




Every single ingredient in this drink has intense nutritional value.  I'm sure you've all heard about some of them individually so combining them together is basically just health in a glass.  

I'm not gonna lie.  This tastes exactly like the ingredients that are in it.  I don't taste the lemon juice that much but that's because the apple cider vinegar sort of takes over.  Luckily I like that vinegar tang but if you're not a fan I would opt for the larger glass of water and chug it. 

I also suggest using barely warm water, otherwise the honey sinks to the bottom and doesn't mix in as easily. 

I saw this recipe floating around Facebook (Conscience Life News) but here are a couple links that are very similar. 


I'm obviously not a health expert so try at your own risk!

Here's what I've discovered after using this drink for a week now.  It definitely is an appetite suppressant.  That could be in part because it's a pretty large glass of water that I chug almost all at once but I don't start to feel hungry again for about an hour after I drink it. I have also noticed that when I started to think I might be getting a cold, this drink wiped out my symptoms.

Oh and one more thing, I haven't had any heartburn at all.  I was thinking that with all this acidity that I might, but I've been good to go. No problems.

Natural Detox Drink



Ingredients
  • 12-16 oz water
  • 2 Tbsp apple cider vinegar (organic is best, I use Braggs)
  • 2 Tbsp lemon juice (organic if you can find it)
  • 1 tsp cinnamon
  • 1 Tbsp raw honey (local)
  • dash cayenne pepper (optional)
Cooking Directions
  1. Mix all the ingredients together and drink 3x's a day, 20 minutes prior to breakfast, lunch and dinner.
  2. Continue for 2 weeks.
  3. After 2 weeks switch to drinking it just 1x a day before breakfast or lunch.

Pomegranate Lemonade Spritzers



It's been so hot here.  I mean, I just returned from vacationing in Montana and it was 90 degrees there, but 90  degrees here feels 10x worse. Like, walking outside into the humidity is exhausting. I go ahead and count that as my workout for the day.  I mean, there is sweat involved so it's practically the same thing…right?

This drink is so refreshing, you almost forget you're melting into your chair.  Almost. 

This version is non-alcoholic but adding a flavored vodka would be delish in my opinion. Maybe just an ounce before adding the club soda.  Just thinking out loud here. 

Pomegranate Lemonade Spritzers

Ingredients
  • 1 cup pomegranate juice
  • 1 cup fresh squeezed lemon juice
  • 4-6 cups water
  • 1 cup simple syrup (1 cup water, 1/2 cup sugar simmered until the sugar dissolves)
  • club soda
  • lemon slices (for garnish)
Cooking Directions
  1. Mix the first four ingredients in a large pitcher. Fill glasses with ice and then pour in a little more then halfway with the pomegranate juice mixture. Fill the remaining portion with club soda and give it a little stir. Garnish with lemon slices if desired.

Skinny Shake


If you're anything like me, you're trying to find ways to get your chocolate fix without eating a cupcake or candy bar. OK, that might just be me.

I'm attempting to stay off sugar for a while.  Not forever, just until I don't require it during the day or at dinner.  It's been my one and only true addiction.

So back to this skinny shake. This does require a blender or in our case a NUTR-bullet.  So quick and easy and best of all it totally takes care of my chocolate craving.  The post I used for this shake said it tasted like a Frosty.  I wouldn't go quite that far but it does taste good and you don't have to feel guilty about it. Definitely worth washing the blender.

  • 1/3 whole banana
  • 1/2 tsp vanilla extract
  • 3/4 cup almond milk (unsweetened)
  • 1 - 2 tsp unsweetened cocoa

Frosted Iced Tea




Are you looking for a good drink for this Labor Day weekend? Might I make a suggestion? This drink was created by my friend Becky and we had it while she was here visiting.  I'm a fan, I like it very much.  We thought and thought about what we should call it and finally settled on Frosted Iced Tea because of the "Cake" vodka but you could certainly use Vanilla or Whipped Cream flavored vodka as well.  It's easy to find iced tea if you're out at the beach or pool, you just might have to carry a little flask with your trusty vodka. :)

Ingredients
  • 8 oz Iced Tea
  • 1 oz. Cake Vodka (Vanilla or Whipped will work)
  • Sweetener of your choice
Cooking Directions
  1. Fill a glass full of ice.
  2. Sweeten the tea to your preference (honey, sugar, stevia...)
  3. Pour in the sweetened tea into the glass of ice and top with vodka. Stir and enjoy.

Sex in the Driveway



I hope you had a fantastically fun 4th of July!  We had a big ol' block party on our street and it was so much fun! There is nothing like living on a street full of people you actually like!  Imagine that! We have several of these little block parties a year and I look forward to them.  Also, it's handy to be steps away from your house on late night's like these. 

I'm a fan of sweet fruity flavored drinks so this was perfect for me. 


I'm not sure where the name came from, or maybe I just don't want to know. :)  If you like fruity drinks you're going to really like this, perfect for pool parties!

  • 1 oz. Blue Curacao
  • 1 oz. Peach Schnapps
  • 2 oz. Vodka, I used dragon fruit but citrus is good too.
  • top it off with Citrus flavored soda like 7up
Directions
  1. Mix all the ingredients (except the soda) and put into a big glass with ice. Top it off with soda.

Blueberry Lemonade


I bought a bottle of blueberry juice from my local farmers market a while back and really had no idea what I was going to do with it. But I figured, how can you go wrong with blueberry juice?


This is the bottle I bought, I don't know if this is available in the Internet but I've seen it other places as well so I know it's findable, probably wherever you could go and get fresh produce or farmers markets would be your best bet.


My husband and daughter got hold of this and drank it all up practically before I could even get any.  They're blueberry fans to say the very least.


The lemon and blueberry work perfectly together of course and what's nice about using blueberry juice is there isn't any seeds or pulp.

The lemon juice adds a little tart bite in the background and the blueberry is front and center but it mixes perfectly.  I'm just sad it only makes a gallon, seriously, I'm off to find more blueberry juice!

Ingredients
  • 1 1/2 cups sugar
  • 1 1/2 cups lemon juice
  • 1 quart (4 cups) blueberry juice
Cooking Directions
  1. Place all the ingredients in a gallon sized container and fill the rest with cold water. Mix until the sugar dissolves.

Fresh Strawberry Lemonade


For my daughter's birthday party everything was strawberry themed.  Even the drinks.  I knew for sure that strawberry lemonade was going to be served, I just had to find a recipe.  In case some of you are new to this blog, if I can make it from scratch I probably will, so I didn't want a recipe that included any kind of canned or bottled anything.  When I found this recipe on Pinterest I knew it was the right one for the job. 



I had a truckload of strawberries at my disposal so measuring out 1 1/4 pounds of strawberries was not a problem.


For this recipe, you're going to want to get the organic lemons.  You have to puree them skin and all.


Pour the mixture through a mesh sieve to get out all that pulp.


Pour the remaining water through this pulp mixture so that you're getting all that flavor.


All in all it was a very simple recipe to make as long as you've got a blender or food processor handy.

You can really taste the strawberries and the lemons, I would say that the ratio is perfect and you can sweeten as much or as little as you like.  I used honey and it was awesome.  It's sort of a thicker type drink - not smoothie thick but more like pulpy orange juice thick.  Garnish with some fresh lemon and strawberry slices and you've got a showstopper drink.  Perfect time of year to serve this one since strawberries are at their peak (well at least in the South they are).

Ingredients
  • 1 1/4 pound fresh strawberries, washed and halved
  • 2 whole lemons, washed and quartered
  • 1/2 to 3/4 cup honey or sugar, to taste
  • 6 cups water
  • ice
Cooking Directions
  1. In the blender, add the quartered lemons (rind included, use organic if possible), the strawberries, 2 cups of water and honey (or sugar).
  2. Strain the mixture over a bowl or pitcher along with the other 4 cups of water.
  3. Add additional sugar if desired.
  4. Garnish with ice, lemon and strawberry slices if desired.

Chocolate Strawberry Wine



I'm very very happy that I found this wine on my last trip up to Massachusetts.  How can you possibly go wrong with chocolate strawberry wine? Well if you like sweet wine that is, otherwise you probably wouldn't like this. 

There I was, minding my own business at a local grocery store when this caught my eye. I love chocolate.  I love strawberries.  This wine was coming with me. 


Believe it or not it really does taste like chocolate and strawberries.  I had my doubts but it's true!

Cranberry-Orange Vodka


Looking for a yummy New Years Eve cocktail? I have one! Now is the time to make this yummy drink because it does need to sit for a week but after that you're going to have a really delicious drink mixer.  I made some a week ago and just tried it last night and was very pleased with the fruity taste.  

It's so easy to put together and would be yummy next to the pool this summer too.  You should run out and put some cranberries in your freezer for just such an occasion. Or make some up now and just store it till July...

The flavors made me of the cranberry sauce I've made for Thanksgiving the last two years and my husband and I both love.  Very seasonal!  You can really taste the orange and the color is a beautiful red with sparkles from the club soda I used. 


Peel two oranges and place the peels in some large mason jars.


Pour a 750 ml of vodka over the top.


Cook the cranberries, sugar and vanilla on the stove and then let cool.


Now add the cooled cranberry mixture evenly between the two mason jars.  Now seal them up with lids and let them sit for a week.


Strain the mixture and toss the cranberries and orange peel.  Refrigerate the vodka and when you're ready to serve, pour two ounces into a glass with lots of ice.  Top off with club soda or tonic water and add a lime for garnish.

Cranberry-Orange Vodka

Ingredients
  • 1 pound fresh or frozen cranberries
  • 1 cup sugar
  • 2 tsp vanilla extract or 1 vanilla bean split
  • 2 oranges, peels cut into 2 inch strips
  • 1 bottle vodka (750 ml)
  • Tonic water or club soda
  • lime slices for garnish
Directions

  1. In two large mason jars with lids, add the orange peels and pour the vodka on top. 
  2. Use a medium sized saucepan and add the cranberries, sugar and vanilla and cook over medium heat until the cranberries have popped.  About 5 minutes or so. 
  3. Let the cranberry mixture cool. 
  4. When the cranberry mixture is cool add it to the vodka and orange slices and then cover with an airtight lid and let sit for 1 week. 
  5. After a week, strain the vodka and pour into a clear container with a lid.  
  6. Store in the refrigerator. 
  7. When ready to serve, pour 2 ounces of the cranberry-orange vodka in a glass with ice and top with tonic water and a fresh lime slice for garnish.

"The Best" Homemade Hot Chocolate Mix


It's hot cocoa time right? It's chilly out there even down here in the south.  I had to wear a long sleeve t-shirt yesterday. :)  

Some things I should just keep to myself right? 

Anyhoo, time to break out the tea and hot cocoa and if you make your own you can feel good about knowing what is in it and also it makes a TON!  Way more than you're going to get in those little packets at the store. 

This recipe has been husband and child approved, in case you're wondering.  Very chocolaty but not that dark rich chocolate, more of a milk chocolate type.  I just used the regular baking cocoa and not the Dutch process so that probably has something to do with it.  But I'm a milk chocolate hot cocoa kind of girl. Very similar to the store bought kind.  The recipe says this is "The Best", I don't know about that since I've only tried a couple of homemade versions but this one is pretty darn good!


Process the mixture in a food processor so it will blend well with the hot milk.




Topping this cocoa with mini marshmallows or whipped cream is a great idea. You should totally do that.

Hot Chocolate Mix
Recipe from Mel's Kitchen Cafe


Ingredients
  • 3 cups non fat dry milk powder
  • 2 cups powdered sugar
  • 1 1/2 cups cocoa powder, dutch process or natural
  • 1 1/2 cups white chocolate chips or white chocolate
  • 1/4 tsp salt
Cooking Directions
  1. Whisk together all of the ingredients. If you are using a white chocolate bar just chop it slightly first.
  2. Working in batches, blend all of the ingredients in a food processor until you have a fine powder.
  3. Store in an air-tight container for up to 3 months.
  4. To make hot chocolate: 1 cup of hot milk and 1/3 cup of hot chocolate mix.
